Instructions:

  3. Gradually whisk in the milk and cream, continuing to whisk until the mixture is smooth and thickened, about 5-7 minutes.
  4. Remove the saucepan from the heat and stir in 1 1/2 cups of shredded cheddar cheese until melted and smooth. Add garlic powder, salt, pepper, and paprika, stirring to combine.
  5. Layer half of the sliced potatoes in the prepared baking dish, overlapping them slightly. Top with half of the sliced onions.
  6. Pour half of the cheese sauce over the potatoes and onions, spreading it evenly.
  7. Repeat with the remaining potatoes and onions, then pour the remaining cheese sauce over the top.
  8. Cover the dish with foil and bake for 45 minutes. Remove the foil and sprinkle the remaining 1/2 cup of shredded cheddar cheese on top.
  9. Continue baking, uncovered, for an additional 30-35 minutes, or until the top is golden brown and the potatoes are tender.
  10. Let the dish cool for 10 minutes before serving. Garnish with chopped parsley.
